Breakfast Casserole

8 slices of organic sourdough bread, cubed
1 pound ground sausage, cooked
1 onion, diced
1 cup celery, diced
1 firs-roasted pepper, diced

8 eggs
2 cups whole milk
1 cup shredded cheese
1 tablespoon black cracked pepper

Preheat oven to 325° F. Saute onion, celery, and pepper until onion is clear. Grease the bottom and sides of a casserole dish: layer bread, sausage, and cheese.

Mix eggs, milk, and pepper.  Pour over casserole.

Bake for 45 minutes, until done.
