Chicken Mushroom

Chicken mushrooms grow wild in the Virginia woods. Confirm you have the right mushroom — others could be poisonous. Do not pick chicken mushrooms in the spring or from conical trees.

Why are the called chicken mushrooms? They taste like chicken — of course.

Dice the chicken mushroom into 1/4-inch cubes.  Cover in chicken broth and boil for 20 minutes. Serve as a side dish or add to quiches and savory pies.

Freeze the remaining cooked mushroom until needed. Make sure to cook thoroughly once defrosted.

This chicken mushroom was harvested from our woods in Vienna, Virginia. It weighed over four pounds and was a great addition to many meals.
