Croque Madame

Per sandwich

2 slices 1” think bread
2 thick slices of Virginia ham
2 slices of provolone cheese
1 egg

hollandaise sauce (see recipe)

Preheat over to 400° F. Place bread open-faced on a baking sheet with layering bread, cheese, and ham.  Bake at 400° F for about ten minutes,  until the cheese is melted and the bread is crisp.

While the bread is in the oven, fry one egg sunny side up.

Put the two slices of the sandwich together, put the egg on top, and spoon over the hollandaise sauce.
