This is our favorite way to thaw and cook frozen chicken. The results are versatile. The cooked chicken can be diced for butter chicken, savory pies, and other sauce-based chicken recipes or seared with seasoning and served.

frozen boneless, skinless chicken
1 cup chicken stock

Put frozen chicken in a pressure cooker and add stock. Cook on high pressure for 8 minutes and then let it naturally release.
