Coconut Rice

1 cup Organic Indian Basmati rice
2 cups Coconut milk with cream (canned)
Fresh parsley


Rinse the rice.

In a pressure cooker, add rice and coconut milk. Add water to make up the difference if the can is less than 16 ounces. Pressure cook on the rice setting.|

Garnish with fresh parsley.
