Sweet Potato Pancakes

Keep the potato-to-egg ratio to use up leftover cooked sweet potatoes.

1/4 cup mashed sweet potato
1 egg

Mix egg with sweet potato. Drop about 1/8 cup on a hot griddle. Press the potato to an even quarter-inch thick round. Flip once when browned.
