White Hominy Grits
Hominy is made from dried maize kernels that are soaked and cooked in an alkaline solution, typically made with lye or slaked lime, to remove the hull and germ of the corn kernels. After treatment, the corn kernels are thoroughly washed to remove any bitter flavor from the alkaline solution. Kernels can be cooked whole or ground into grits.
1 cup organic white hominy grits
4 cups organic chicken stock
1/2 cup whole whipping cream
8 ounces shredded Cheddar or Parmesan Cheese (optional)
Salt, pepper, and butter to taste
Bring the chicken stock to a boil. Whisk in grits while constantly stirring. Turn down the heat to a low simmer. Whisk occasionally to prevent sticking and burning for at least twenty minutes. Add cream, cheese, salt, and pepper. Serve hot with a pat of butter.
