Josephine’s Beef Short Ribs

This family favorite recipe came from Josephine Willis Hitchcock.

2-3 pounds beef short ribs
1 thinly sliced onion

Sauce:

1/2 cup organic brown sugar
1 cup organic ketchup
1 1/2 teaspoons celery seed
1/4 cup apple cider vinegar
2 teaspoons Worcestershire sauce

Mix all sauce ingredients in a saucepan on medium heat and cook for 20 minutes.

Braise beef ribs in a skillet with olive oil, then dip both sides in the sauce. Arrange onion slices on top of the ribs. Cook at 300° F in a convection oven for 3-4 hours.  Uncover for the last 20 minutes.
