Poor Man’s Spaghetti

Grandmother Josephine Hitchcock made this fun summer pasta dish.

1 pint cherry tomatoes
1 onion
1 pound bacon
grated Parmesan cheese
chopped fresh parsley and basil
spaghetti noodles

Cook bacon and crumble.  

Quarter the cherry tomatoes.  Sauté onion in 2 tablespoons of bacon grease until clear. 

Stir in tomatoes and cook for about five minutes until hot. Pour on warm cooked noodles with cheese, parsley and basil. Stir together and serve.
